Frymaster controllers tell you a lot when something goes wrong, but the messages are short. This guide explains the ones kitchens see most, what usually causes each, and what to check before calling for service. Exact wording varies a little between controllers (Digital, CM3.5, M2000, M3000, and newer touch controllers), but the meanings carry across.

Safety first: hot oil causes severe burns. Turn the fryer off and let oil cool before working near the pot. Lock out power and shut off gas before touching electrical or gas components.

IGNITION FAILURE (gas fryers)

The fryer tried to light but didn’t prove a flame. Check in this order:

  • Gas supply: is the gas valve to the fryer open, and are other appliances on the line working? A partly closed quick-disconnect is a common cause after cleaning.
  • Ignitor: a cracked, dirty, or worn ignitor won’t light the burner reliably.
  • Flame sensor: the sensor has to see the flame. Carbon buildup or a bad sensor causes the fryer to light briefly, then shut off and lock out.
  • Combustion blower: on blower-equipped models, a blower that isn’t running or a blocked air intake stops ignition.
  • Gas valve and ignition module: if the ignitor sparks and gas is present but the burner never lights, the gas valve or ignition module is the next suspect.

HEATING FAILURE

The controller called for heat, but oil temperature didn’t rise the way it should. Common causes:

  • Electric fryers: a failed heating element, a bad contactor, or a tripped high limit.
  • Gas fryers: a burner that lit and then dropped out, a weak gas valve, or a failed ignition component.
  • Temperature probe: a probe reading wrong can make the controller think oil isn’t heating.

HOT-HI, HELP HI, or HI-LIMIT messages

These mean the oil got hotter than it should. Turn the fryer off immediately and let the oil cool. The usual root causes are a failed temperature probe that’s reading low, a contactor stuck closed (electric), or a gas valve stuck open (gas). The high-limit thermostat is the backup that shuts heat off if all else fails; if it’s tripping, the first-line control has already failed. A high-limit failure message can also mean the high limit itself has failed its self-test and needs replacing.

PROBE FAILURE

The controller is getting an impossible reading from the temperature probe, usually because the probe is open or shorted, or its connection is loose or corroded. Check the plug and wiring first, then test or replace the probe.

RECOVERY FAULT

After a load went in, the oil took too long to get back to temperature. It’s an early warning of a weak element, a burner not firing fully, or an overloaded basket. Address it before it turns into a heating failure.

DRAIN VALVE OPEN, or similar drain messages

The fryer won’t heat because it thinks the drain is open. Make sure the drain handle is fully closed. If it is, the drain microswitch or its adjustment is the likely problem. A drain valve that leaks oil when closed needs repair or replacement.

How do I reset a Frymaster ignition failure?
